Biscuit Jar Stuffed Pancakes

Method

  1. Spoon six small portions of Biscuit Jar Spread onto a lined plate or tray.
  2. Freeze for approximately 20–30 minutes until firm. This makes the pancakes much easier to fill.
  3. Mix the flour, sugar, baking powder and salt together in a bowl.
  4. In a separate jug, whisk together the egg, dairy-free milk, vanilla and oil.
  5. Gradually whisk the wet ingredients into the dry ingredients until you have a smooth, thick pancake batter.
  6. Heat a lightly oiled non-stick frying pan over medium-low heat.
  7. Add approximately two tablespoons of batter to the pan.
  8. Place one chilled portion of Biscuit Jar Spread into the centre.
  9. Cover with another tablespoon of pancake batter so the spread is completely enclosed.
  10. Cook until bubbles begin to appear and the underside is golden.
  11. Carefully flip and cook for another 1–2 minutes.
  12. Repeat with the remaining batter.
  13. Serve immediately with fruit, Biscuit Jar Crumb and an extra drizzle of warm spread.
